These are probably not the healthiest, but still a good way to sneak some veg into a delicious week night treat. 1 can of chickpeas (drained and rinsed)
1,5 cup finely chopped broccoli 1 egg, beaten half cup self raising flour 1 teaspoon smoked paprika half teaspoon dried parsley chilli flakes to taste juice of one lemon 2-3 tablespoons of olive oil for shallow frying. Blend the chickpeas until fine, then mix well with egg, flour, spices and lemon juice. Stir in the broccoli. Consistency should be that of thick batter, if it is too dry, add a splash of water. Heat the oil in a pan, and drop spoonfuls in, and fry until golden brown. These fritters can be enjoyed as an appetiser, or with green salad as a light supper. Best enjoyed hot with a lemon wedge.
