These weird and wonderful brownies taste just like the real thing, despite being made with beans instead of flour! They are also PACKED with fibre! Ingredients:
250g black beans, drained and rinsed well (can also use red split lentils) 3 eggs 1/4 cup cocoa powder 3/4 cup sugar (can be replaced with dates) 3 tablespoons canola oil 1/2 cup chopped almonds or crunchy almond butter Mix everything except almonds in a blender until completely smooth and no bits of beans remain. Add almonds, mix well, bake at 180 degrees celsius for about 40 minutes or until completely baked through. Allow to cool, then slice into squares. Makes about 25 brownies.
